For this recipe edition we’re sharing one of our most refreshing summer cocktails, the Rebujito. It’s one of the simplest cocktails you can make with sherry and the archetypal drink for the ferias of Andalusia. The award-winning Spanish mixologist Tobias Blazquez-Garcia describes it as having “a similar buzz to a gin and tonic or a vodka soda, but with half the alcohol.” He also claims that “even though the taste is quite strong, the Fino sherry means it is also very dry, so you drink it slowly. It’s also relatively low in sugar compared with most other cocktails.”

The exact recipe for the perfect Rebujito changes from Spanish region to region but here’s how we make them at Camino and Bar Pepito:

INGREDIENTS
8-10 mint leaves
50ml Tío Pepe Fino
Fever-Tree Lemonade to top
1 lime wedge

METHOD
It’s all in the name! ‘arrebujar’ means to ‘mix’ or ‘tangle up’

Pour the ingredients into an ice-filled glass and stir.
Finish with a squeeze of lime and sprig of mint.
